Ingredients

For the Cookies

  • 1 cup unsalted butter, softened
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Up to 2 tablespoons milk

For the Topping

  • 3 cups shredded sweetened coconut
  • 12 ounces chewy caramels
  • 1/4 teaspoon salt
  • Three tablespoons milk
  • For the Chocolate Drizzle:
  • 8 ounces semi-sweet chocolate chips or chunks

Instructions

  1. Warm the oven up to 175°F (350°F).
  2. Mix flour, baking powder, and 1/2 teaspoon salt in a medium bowl. Set aside.
  3. Roll the dough to 1/4 inch thickness on a lightly floured surface. Cut cookies with a doughnut cutter or two different-sized round cutters. Put on a parchment-lined baking pan—the dough forms. When the dough is crumbly, add milk one spoonful at a time.
  4. Put on a baking sheet that has parchment paper on it.
  5. Bake for 10-12 minutes until the edges are lightly golden. Cool on a wire rack.
  6. Toast the shredded coconut in the oven until golden brown, stirring frequently.
  7. Melt the caramel in a microwave-safe bowl. Add the milk and salt. Once the caramel is smooth, add the toasted coconut and mix it in.
  8. Spread the caramel-coconut mixture on cooled cookies.
  9. Melt the chocolate in a microwave-safe bowl, and dip the bottom of each cookie into the chocolate. Place them chocolate side down on parchment paper until set.
  10. Pour the rest of the melted chocolate over the cookies to make them look nice.
  11. Let the chocolate be made completely before serving.

And there you have it – a plateful of delectable homemade Samoas!
